  • 1 md Zucchini, Finely Shredded (about 1 Cup Grated)
  • 2 sm Granny Smith Apples, Finely Shredded (about 1 Cup Grated)
  • 1 1/4 c Light Brown Sugar
  • 1 c Canola Oil
  • 3 lg Eggs
  • 1 tsp Vanilla Extract
  • 3 c + 1/2 Tsp All-purpose Flour, Divided
  • 1/4 tsp Salt
  • 1 1/2 tsp Baking Powder
  • 1 1/2 tsp Baking Soda
  • 1 tsp Ground Cinnamon
  • 1 tsp Ground Nutmeg
  • 1 1/2 c Chopped Pecans Or Any Nut You Like (optional, Less If Desired)

Preheat the oven to 375 degrees F. Coat 2 (4 1/2 by 8 1/2-inch) loaf pans with nonstick spray. Line the pans with parchment paper and spray the paper. Shred the zucchini. You'll need 1 cup. Squeeze out excess moisture. Photo provided by Just A Pinch Recipes
