When looking for a potato side dish, and don't feel like ordinary French fries, try potato wedges. They're thick slices of potatoes that are soft and fluffy inside, and crispy on the edges. Seasoned with salt, pepper, oregano, thyme, and cayenne pepper, there's a slight kick. Parmesan cheese and cheddar cheese melt on top for an extra touch of decadence. These potato wedges are a tasty general side dish for steak, chicken, or burgers. Or, dip in ketchup for a nice snack.

Ingredients
  • 6 md Russet Potatoes
  • 3 Tbsp Vegetable Oil
  • 1/2 tsp Salt
  • 1/4 tsp Black Pepper
  • 1 tsp Dried Oregano
  • 1/2 tsp Dried Thyme
  • 1 dash Cayenne Pepper
  • 1/2 c Grated Parmesan Cheese
  • 2 Tbsp Grated Cheddar Cheese
How To Make Potato Wedges

Preheat oven to 425 degrees F. Scrub potatoes well and peel, if you prefer. (I like to leave the skins on the potatoes.) Cut each potato in half lengthwise. Then cut each half into wedges. Photo provided by Just A Pinch Recipes

Boil potato wedges for about 5 minutes in salted water, then drain. Photo provided by Just A Pinch Recipes
