Sure, today’s cowboy recipes have come a long way from the chuck wagon meals that fueled life on the open trail. But they still share the same spirit: simple ingredients, bold flavors, a little kick of heat, and hearty recipes that come together without much fuss.

So when we saw the latest trending summer recipe was a cowboy-inspired dip from a real cowboy, we were into it before we even tasted it. And after our Test Kitchen gave it a try, we understood exactly why everyone’s been talking about it.

We Tried Candied Cowboy Dip

This viral dip comes from Kent Rollins, better known as Cowboy Kent Rollins on social media. The cowboy cook, author, and television personality from Oklahoma has built a loyal following by sharing recipes inspired by real ranch cooking.

So when Kent himself claimed, “This is the best dip you’re gonna eat all summer,” we immediately hit the kitchen.

The dip starts with a cowboy favorite you might already know: cowboy candy, aka candied jalapeños. The sweet-and-spicy condiment became popular several years ago as an easy way to add bold flavor to everything from burgers and hot dogs to sandwiches and cheese boards. But here, it takes center stage.

Kent makes his cowboy candy from scratch, and it’s surprisingly simple. He simmers a half jar of pickled jalapeños with sugar until it comes to a boil, then lets it cool until it becomes a rich, syrupy mixture.

You’re welcome to make the candied jalapeños from scratch too, but we took the easy route. These days, the condiment is so popular you can find it at just about any grocery store. That means you can skip the stovetop altogether and turn this into a true three-ingredient, no-cook dip that’s perfect for potlucks, cookouts, and game day.

The verdict? “That is dang good,” our Test Kitchen pro Nicole McLaughlin confirms. “It is cool and creamy. It is sweet and spicy and salty. You’re gonna want to make that.”

How To Make 3-Ingredient Candied Cowboy Dip

To make Candied Cowboy Dip, start by adding a 16-ounce container of sour cream to a mixing bowl. Sprinkle in a packet of ranch seasoning and stir until smooth.

Next, roughly chop about 2 to 3 tablespoons of candied jalapeños and stir them into the dip. Pop it in the refrigerator for about 30 minutes to let the flavors come together.

Serve it with tortilla chips once it’s nice and cold, then get ready for the sweet heat to kick in.

Of course, social media already has plenty of ideas for taking it even further. “Try it with cream cheese and bacon too! It will change your life!” one commenter wrote. “If you’re feeling really crazy, toss in a couple tablespoons of raspberry jam,” suggested another.

We’re all for a good upgrade, but honestly, if this simple, flavor-packed cowboy dip is good enough for a real cowboy, it’s good enough for us.
