This is one of my favorite easy dinners to make all summer long, especially when the zucchini is pouring in faster than I can use it. It’s just five ingredients — ground beef, zucchini, chili powder, lemon juice, and salt — but the combination of warm chili powder and bright lemon juice makes it taste really great.

I love cooking with zucchini and have numerous recipes on the blog with creative ways to use it all up. So many people have trouble getting rid of all of their zucchini, but I rarely have that problem. If you have extras, leave them at my house so I can make all of these delicious dishes:

20 Minute Zucchini & Beef Skillet Dinner

And here is one more fabulous savory way to use zucchini. I’ve been making this quick zucchini skillet dinner for a number of years. It’s delicious, fresh, and very easy to make. All you need are a couple zucchinis, a pound of ground meat {I use local grass-fed beef}, fresh lemon juice, and chili powder. It might not sound overly inspiring, but it’s really tasty. The combo of lemon and chili powder is quite delicious.

The one trick that makes this recipe better:

Zucchini holds a lot of water, and if it goes into the skillet raw, that water can dilute the flavor and leave you with a softer texture than you want. Before putting your your beef on to brown, slice the zucchini and toss it with a pinch of salt in a colander or on a paper towel–lined plate. Let it sit for about 10 minutes, then blot dry before adding it to the pan. It’s a small extra step that makes a real difference in texture.

To make this, simply slice up one or two zucchini, salt it, and then start browning your meat. After 10 minutes, add the zucchini and let it cook until the meat is done and the veggies are soft and lightly browned. Add lemon juice, chili powder, and salt and pepper to taste. That’s it!

You can increase the amount of chili powder and lemon juice if you want to make the flavor more intense. I included my preferred amounts of each ingredient in the recipe below.

Zucchini & Beef Skillet Variations

This recipe is intentionally simple — just beef, zucchini, chili powder, lemon, and salt — but it’s also an easy base to build on if you want to switch things up:

  • Swap the squash: Yellow summer squash works just as well as zucchini here, and the two can be used interchangeably or mixed together if you’ve got both coming out of the garden at once.
  • Add onion and garlic: While the classic version keeps things minimal, sautéing a diced onion with the beef (add garlic in the last minute so it doesn’t burn) gives the dish more depth if you want a heartier, more savory skillet.
  • Swap the meat: Ground turkey or venison both work well in place of beef, and cook in about the same amount of time.
  • Change the citrus: Lime juice makes a good substitute for lemon if that’s what you have on hand — it shifts the flavor slightly but keeps that same bright, tangy finish.
  • Turn up the heat: If you like more spice, add a pinch of cayenne or red pepper flakes along with the chili powder.

Storing, Freezing & Reheating Zucchini Beef Skillet

  • Storage: Leftovers keep in the fridge for up to 3 days.
  • Freezing: This is best enjoyed fresh. The zucchini’s texture will suffer after freezing and thawing. Not recommended.
  • Reheating: Reheat in a skillet over medium heat to keep the zucchini from getting mushy. Avoid the microwave if you can, since it tends to make the zucchini watery.

What to Serve with this 20 Minute Skillet Meal

This skillet dinner is versatile enough to serve a handful of different ways:

Classic: Serve with a fresh salad (we love this easy Mediterranean Tomato Salad in the summer!) and crusty sourdough bread for a simple, well-rounded meal.

  • Over rice: Spoon it over steamed rice to soak up the flavorful juices.
  • Taco-style: Wrap it in warm tortillas for a quick handheld dinner — similar in spirit to my Greek steak kabob pitas.
  • Low-carb: Skip the bread and serve it as-is, or alongside a big green salad, for a naturally keto-friendly meal.

Ingredients

  • 1 lb ground beef
  • 1 large or 2 small zucchini thinly sliced
  • 1 – 1 1/2 TBS chili powder
  • juice of 1 – 1 1/2 lemons
  • 3/4 – 1 tsp salt

Instructions

  • Thinly slice the zucchini. Toss with a pinch of salt and let sit in a colander or on paper towels for about 10 minutes to draw out excess moisture, then blot dry.
  • In a cast iron skillet, start browning the beef over medium-high heat.
  • Drain the grease from the skillet, then add the zucchini. Cook uncovered over medium-high heat so any remaining moisture evaporates rather than steaming the zucchini.
  • Cook until the beef is no longer pink and the zucchini is soft and lightly browned, about 8 minutes.
  • Add the chili powder, lemon juice, and remaining salt and pepper to taste. Cook for one more minute, stirring the entire time.
  • Serve with a fresh salad and crusty bread, over rice, or wrapped in tortillas taco-style — similar to the flavors in my Greek steak kabob pitas. Enjoy!
