Long before TikTok baking hacks and viral kitchen tips, home bakers had their own secret weapon for making boxed cake mix taste better: instant pudding mix.

This baking trick has actually been around for decades—at least since the 1980s—and plenty of families have sworn by it for generations. If you grew up in the ’80s or ’90s, there’s a good chance someone in your family quietly added pudding mix to birthday cakes without ever revealing the secret.

That was definitely the case in my family.

My aunt was the first person I ever knew who used this trick, and for years she refused to tell anyone how her cakes always turned out so moist and rich. Every birthday party growing up featured one of her cakes, and everyone raved about them. When she finally admitted she used boxed cake mix plus pudding mix, none of us could believe such a simple ingredient made such a big difference.

So, of course, I had to test it myself.

What happens when you add pudding mix to boxed cake mix?

I baked two yellow cake mixes from Duncan Hines side by side: one exactly according to the box directions and another with instant pudding mix added to the batter.

The difference was noticeable immediately.

The pudding mix version baked up:

  • More moist
  • Richer tasting
  • Slightly denser than the standard version

While the pudding mix did make the cake noticeably more moist and soft, I also found it created a heavier batter that caused the center to sink slightly during baking.

The good news? Once the cake is frosted, no one will ever know, and it will be your secret.

The cake made according to the package directions had that classic light and fluffy boxed cake texture, while the pudding cake felt more bakery-style with a tighter crumb and richer bite.

Instant pudding mix contains starches, sugar, flavorings, and stabilizers that can help the cake retain moisture and create a softer texture as it bakes. That extra moisture creates a slightly more compact texture and gives the cake a richer overall flavor.

Does it actually taste homemade?

While it's hard to replicate the flavor and texture of a truly homemade cake, the pudding mix definitely gives boxed yellow cake a more moist and tender crumb.

In a taste test of the two versions side by side, tasters immediately noticed the difference. The version made with pudding mix was significantly more moist than the regular cake mix prepared according to the box directions. The texture was slightly more compact, but it also felt richer and more decadent with every bite.

  1. Prepare a boxed yellow cake mix according to package directions.
  2. Add one 3.4-ounce box of instant vanilla pudding mix to the dry ingredients.
