It couldn’t be easier.
I didn’t grow up with avocados in my life. I grew up smack dab in the middle of the U.S., where no avocados grow, and the ‘70s natural health movement didn’t permeate. I’m pretty sure my mom called avocados “green mush,” and she still doesn’t eat them. I think there’s something about a vegetable/fruit with the texture of butter that isn’t butter that weirds her out.
Once I went to college and then moved around the country, culinary doors opened, and I began eating avocados left and right. Now in California, I’m in an avocado paradise, regularly spotting them growing in neighbors’ backyards and easily reaching for them at the local farmers market. I have to disagree with my mom—avocados are delicious.
And while I love dishes like guacamole, crispy avocado, and elaborate salads and salad dressings featuring the creamy fruit, sometimes simple is best. Case in point, Coco Morante’s Easy Avocado Salad. With two ingredients (and a sprinkle of black pepper), it’s the definition of easy and classy. Yes, both can be true!
Why I’m Making This Avocado Salad Forever
To truly embrace the beauty of the avocado, keep it simple with this retro recipe. For a small appetizer or salad, halve one avocado for every two guests (don’t forget to wash it first). Remove the pit and fill each cavity with a high-quality vinaigrette. Sprinkle with pepper and serve immediately.
This deceptively simple dish has a few things going for it. It’s incredibly quick and easy, even if you make your own vinaigrette. It’s good for a variety of diets, including gluten-free and vegan, and it looks elegant. There’s something about the pretty green avocado on a plate with the vinaigrette balancing inside—it’s sure to make your guests smile.
And while it’s dinner party-worthy, Coco notes it also makes a lovely snack. It doesn’t need anything extra, but sometimes I like a little crunch for contrast. A sprinkle of toasted sesame seeds, toasted pepitas, or quinoa crunch adds to the fun.
