I’ve followed blogger Adrianna Adarme of A Cozy Kitchen for years, and when I saw her latest viral recipe for strawberry brownies, I knew I had found my summer baking obsession. Lucky for me, Adarme took some time to chat with me about these delicious strawberry brownies in the midst of her preparations for her book release. A Cozy Kitchen: Cookbook comes out this fall.
The Inspiration Behind A Cozy Kitchen’s Strawberry Brownies
Adarme was inspired to make this recipe after seeing how much her readers loved the lemon brownies upon which the recipe is loosely based. “The lemon brownies have this very fudgy, chewy texture, and people loved it.”
From there, she and her team played around with different flavor variations and landed on using fresh and freeze-dried strawberries to create the perfect summer variation.
She’s no stranger to recipes that take the internet by storm. Adarme has had several of her recipes go viral. These strawberry brownies in particular are eye-catching with their brilliant pink hue, and they’re something you want to bake for summer. “The recipe is quite simple too,” says Adarme. “There’s an ease to this recipe, which makes it attractive.”
When I talked to Adarme I had just polished off two of these strawberry brownies. The texture of these treats is indulgent and fudgy, but the strawberry flavor is bright and summery. It’s the perfect baked good to bring to a park or the beach, like many of Adarme’s followers have been doing since seeing the recipe online.
“What makes me the happiest about this is seeing my readers make this and take it to a picnic and a friend’s birthday party. It’s gone from being a viral video to people making it and sharing it with their friends and family.”
How I Make A Cozy Kitchen’s Strawberry Brownies
These one-bowl brownies are so simple. They come together quickly and in one bowl to minimize the mess and maximize flavor.
First, you’ll make the strawberry brownie batter, which uses both pulverized freeze-dried strawberries and fresh strawberries. I love the double punch of strawberry flavors—it really takes this recipe to the next level. Plus, the strawberries make the bars a perfect summer pink. Adrianna gives instructions for how to use red food coloring to make the pink more intense, but I opted not to use extra coloring, letting the natural hue of the berries shine through. I loved the specks of red that studded the glaze, but if you’d prefer a more even color, you can always use a fine mesh sieve to sift the pulverized freeze-dried strawberries as you’re adding them to the glaze.
While the brownies bake and your kitchen starts to smell like a corner store bakery, the white chocolate and strawberry glaze comes together quickly in the microwave. One word of caution: Make sure to follow Adarme’s advice and keep the freeze-dried strawberry powder in an airtight container in the time that elapses between using it in the batter and the glaze. Even a few minutes will have the powder hopelessly clumpy!
Then, all you need is some patience. “My biggest advice is not to skip letting the glaze set on the brownies before you cut into them … even though it can be hard to wait!”
I can confirm: waiting for the brownies to cool to glaze them and then waiting again for the glaze to set was a challenge, but it was well worth it in the end for each delicious bite.
