Tex Mex Dip

  • 1 head of lettuce, shredded
  • 1 can of refried beans or black beans, rinsed and drained
  • 1 cup grape tomatoes, halved
  • 1 cup corn, drained
  • 1 cup shredded cheese ( extra sharp cheddar or Mexican blend)
  • 1 cup sour cream
  • 1 package mild chili or taco seasoning
  • 1 cup mild chunky salsa
  • tortilla chips, or corn chips, crushed for topping

Directions:

  1. Mix the sour cream and seasoning until blended. Set aside.
  2. Layer this in a clear glass bowl or trifle dish.
  3. Start with a layer of shredded lettuce evenly across the bottom.
  4. Top it with the black beans as the second layer, followed by the corn, and then the tomatoes.
  5. Evenly spread with the shredded cheese next
  6. Carefully spread the cream mixture over the cheese layer.
  7. Spoon the salsa over the sour cream layer.
  8. Top this with crushed tortilla chips.
  9. Garnish with extra cheese, green onions, or fresh cilantro and serve this chilled.
