One of TikTok's buzziest food sensations is setting up shop in Austin.
PopUp Bagels, the viral bagel-and-schmear chain, will open will open a take-out only shop at Domain Northside this fall, according to filings with the Texas Department of Licensing and Regulation.
The Connecticut-based chain announced plans in April to expand into the Lone Star State, opening its first Texas location in Dallas in June.
The "grip, rip and dip" bagel shop doesn't serve traditional bagels sliced in half. Instead, customers get hot, whole bagels straight from the oven to tear and dip into various cream cheese and butter flavors.
The bagel chain has rapidly expanded across the U.S., in large part thanks to its presence on social media and numerous collaborations with brands, celebrities and influencers. The company has created limited-time flavors with brands including dulce de leche with Dora the Explorer, hot pickle butter with Grillo's Pickles, stout schmear with Guinness and Shirley Schmear with Austin-based Poppi. Other limited-time include cacio e pepe, brown sugar cinnamon, vodka sauce and dessert bowl.
The company plans to begin construction on its north Austin takeout shop on Aug. 1, with construction expected to wrap up by mid-September, according to the filing. The company is spending an estimated $350,000 on the 1,425-square-foot storefront, which will be in the same building as Lotus Chinese, The Salty Donut and Velvet Taco, just south of Apple's Domain Northside location.
PopUp Bagels said it plans to bring at least 12 locations to Texas, including Houston and San Antonio.
"Texas represents a significant opportunity for PopUp Bagels as we continue to scale the brand," PopUp Bagels CEO Tory Bartlett said in the announcement. "Launching in Dallas gives us a strong entry point into the state, and Houston will follow shortly after. We're approaching this growth with the same discipline and focus on quality that have defined PopUp from the beginning."
The company did not immediately respond to a request for comment.
PopUp Bagels' basic menu includes five bagel varieties - plain, everything, salt, poppy seed and sesame - sold in packs of three, six, 12 or 30. Spreads include cream cheese, salted butter and weekly specials, plus toppers like smoked salmon.
