Ingredients
- Whole grain bread 8 fette
- Smoked Salmon 200 g
- Avocado 2
- Greek yogurt 0% fat 200 g
- Chives q.b. tritata
- Lime juice 15 g
- Extra virgin olive oil q.b.
- Fine salt q.b.
- Black pepper q.b.
To garnish
- Lime 1
- Dill q.b.
- Lemon peel q.b.
- Lime peel q.b.
Preparation
To prepare the salmon and avocado toast, cut the avocado in half (1), remove the pit and scoop out the flesh with a spoon (2). Place the flesh in a food processor (3).
Add the Greek yogurt (4), olive oil (5) and salt (6).
Season with pepper (7) and lime juice (8). Blend until you obtain a smooth cream (9). Keep it refrigerated.
Place the bread slices on a baking sheet lined with parchment paper (10) and toast the slices for about 5 minutes at 356°F, until golden (11). Alternatively, you can toast the bread slices in a pan or on a griddle. Spread the avocado and yogurt cream on the toasted bread slices (12) (13).
Top with slices of smoked salmon (14) and chopped chives (15).
Finish with lemon zest (16) and lime zest (17) and garnish your salmon and avocado toast with sprigs of dill (18).
Storage
We recommend eating the salmon and avocado toast immediately.
You can store the cream in the refrigerator for one day.
Tip
You can replace the lime juice with lemon juice when preparing the avocado cream.
