This Salad Goes With Everything

The best thing about this super-easy salad is that it can be served just about anytime you need a refreshing, delicious side. Sliced cucumbers are tossed with rice vinegar, sugar, and salt (plus green onions, if you’d like), and the dish can be served immediately or refrigerated for up to two days.

Serve these cukes alongside grilled or roasted meats or fish, atop your favorite salad or hummus bowl, with a simple weeknight stir-fry or fried rice, or as a crunchy, kid-friendly side for tacos, pizza bagels, or chicken strips. The cucumbers could even be drained and used as a crunchy, pickle-y element in sandwiches. It seems there’s nothing this cucumber salad can’t do!

How To Tweak This Recipe

The simplicity of this salad is what makes it play well with so many different types of dishes, but it’s also something that offers you the ability to tailor it to your taste and preferences. There are a ton of ways you could take this salad in another direction—here are some of our favorite ideas:
