Over the years, Eiichiro Oda has delivered quite a lot of incredible transformations in One Piece, and as expected, the vast majority of them have surrounded the Straw Hat Pirates. This doesn't come as a surprise to any fan, given that the Straw Hat Pirates are protagonists of the series.
However, there are other incredible transformations that we have witnessed in the series as well, and these transformations often get overshadowed because the Straw Hat Pirates are simply that overwhelmingly popular, especially with their new powers and transformations. That said, these other transformations are incredible in their own ways, and while some of them are just about average, others have proven themselves to be some of the very best in the entire series.
Lucci's Awakened Zoan Transformation

In the Egghead Island arc of One Piece, fans got to witness quite a lot of incredible transformations, and Lucci's Awakened Zoan Transformation was certainly one of them. Lucci is a user of the Neko Neko no Mi, Model: Leopard.
With his intellect, he was able to take this Devil Fruit beyond all limits and awaken it. This awakening was put on full display in the Egghead Island arc, where he displayed an incredibly powerful form in his battle against Luffy. Later on, he utilized the transformation once again in his fight against Zoro, and it proved to be strong enough to hold the Straw Hat swordsman nearly to a tie.
Sulong

The Sulong is a special transformation that is accessible only to the Mink Tribe of the One Piece world. When there is a full moon, the Minks simply need to make eye contact with the moon, and they then gain this incredibly majestic transformation that is glowing with electro and completely white.
They grow in terms of size, and their hair, clothes, and other animalistic features grow out as well. Their ability to use electro is heightened to quite a degree, and their physical attributes receive a massive boost. The Sulong transformation is absolutely incredible, and every single Mink capable of controlling this form gains an incredible power boost during the full moon.
Big Mom's Giant Form

One of the Emperors of the Sea, Big Mom is quite a powerful villain that fans have seen a lot of in One Piece. In the Wano Country Arc, fans got to see her fight her biggest battle, and this came against Trafalgar Law and Eustass Kid.
Big Mom showcased a unique transformation when she was fighting against them, and she accessed this by consuming her own lifespan. By sacrificing a year of her own life, Big Mom was able to grow tremendously in terms of size and gain much more power. While simple, this transformation proved to be incredibly effective.
Raid Suit Transformation

The Raid Suit transformation is certainly an incredible one that differs from the vast majority of One Piece transformations. This is because the Raid Suits are worn instead of offering a transformation that sees the usage of a Devil Fruit. Only the members of the Vinsmoke Family have access to these specialized Raid Suits, and they can access them because they are genetically coded to each individual that they belong to.
Once accessed, the Raid Suit then coats their entire bodies, giving them incredibly heightened physical powers, and things such as powerful shields, and of course, a resistance to fire. They also gain the ability to fly and incredibly high-speed movement that most cannot even see.
Yamato's Okuchi No Makami Form

Yamato was introduced to the fans in the Wano Country arc and has, since then, won the hearts of the fans. Of course, being the child of Kaido, Yamato was sure to be a powerful individual, and this was proven in the Onigashima War. Yamato was seen accessing a unique transformation, thanks to the Devil Fruit of the Okuchi no Makami, which was a Mythical Zoan Dog Dog Fruit model that they consumed as a kid.
This Devil Fruit gave Yamato the ability to transform into a guardian deity wolf and its hybrid at will. Yamato also gains the power to manipulate ice with this Devil Fruit, making it incredibly effective in combat.
Marco's Phoenix Form

The former First Division Commander of the Whitebeard Pirates, Marco, possesses what can be considered to be the most majestic Devil Fruit transformation in One Piece. Marco is a user of the Phoenix fruit, and this transformation is absolutely stunning, no matter which way fans look at it.
As the name implies, it allows Marco to transform into a Phoenix as well as a Phoenix-human hybrid at will. Marco can also manifest the blue flames of resurrection all over his body, which are overpowered as they heal any and all damage that he takes. In terms of combat, Marco gains heightened physical abilities and the power to heal from injuries as long as his stamina is up.
Kaido's Hybrid Form

The Yonko of the Sea, Kaido possesses one of the most powerful and, at the same time, most incredible Devil Fruits in One Piece. Using this amazing Mythical Zoan Devil Fruit, Kaido can transform into an Azure Dragon. He can also access a hybrid form of this Devil Fruit, giving him incredible power and a very terrifying design.
Five Elders Transformations

Quite easily, one of the most intimidating transformations that fans have seen in One Piece comes through the Five Elders. From the 5, Saturn was first revealed to have the power of Gyuki in the Egghead arc. This proved to be quite a terrifying form and certainly one of One Piece's best transformations.
Shortly after, other Elder forms were revealed to us as well, and they all proved to be incredibly overpowered, all the while being amazing to look at.
Loki's Nidhoggr Form

Unveiled first in One Piece Chapter 1175, Loki’s Nidhoggr form is incredibly powerful. He ate the Ryu Ryu no Mi, Model: Nidhoggr, 14 years ago, and this Devil Fruit is considered to be legendary, as it offers the power of the God of War of Elbaf. The Nidhoggr is the largest dragon that exists in the world of One Piece, with pitch-black color and the ability to spit lightning.
The power of the Nidhoggr is such that it holds the potential to destroy the entire world. In the Elbaf Arc, we saw Loki fight against Nerona Imu with the power of his Nidhoggr fruit, and needless to say, this ability proved to be incredibly terrifying in battle. Loki was able to utilize powerful abilities such as Thorheim, among others, some of which even dealt damage to the King of the World.
Nerona Imu's Akuma Transformation

By far, the best transformation belonging to a non-Straw Hat that we have seen in One Piece is Nerona Imu's Akuma no Mi form. This transformation debuted officially in One Piece Chapter 1179, and immediately after, its powers were shown to us. With its powers, Imu can manipulate Black Flames of Omen and deal deadly damage to his enemies.
More than that, Imu also holds the ability to shapeshift in this form and utilize multiple weapon-based attacks. By far, this is the most versatile One Piece transformation that we have seen, and even including the Straw Hats, it certainly ranks among some of the best ones.
