I made one simple swap to my Aperol spritz, and I'm never going back

My Aperol Swap for Summer
Sarti Rosa has arrived in the U.S. Learn why I'm using this fruity Italian aperitivo instead of Aperol in my favorite summer spritzes.

Shake up your happy hour routine.

All over Europe, travelers have been posting about their obsession with the latest entry into the Italian aperitivo category. Hot pink, fruity, and totally spritzable, Sarti Rosa tastes like a tropical Aperol but less bitter. Now that it’s available in the U.S., this bottle is poised to become summer’s must-try spritz ingredient.

Social media is already obsessed

The eye-catching pink Sarti Rosa spritz will be taking over your feed this summer.

Food influencer Hailee Catalano made one in her kitchen and said, “It’s fruity...definitely doesn’t have the bitterness of something like Campari,” adding that “it’s tasty and refreshing, especially in the summer—I’m a fan.”

Food creator Erin O'Brien hailed it, “The spritz of the summer” and said it tastes like a mix of blood orange, mango, and passionfruit. “I’m a big fan of anything tropical so I love this.”

How to make the perfect Sarti Rosa spritz

Use the classic 3-2-1 formula of prosecco-aperitivo-soda:

1. Grab your prettiest goblet and fill it with ice.

2. Add the following ingredients:

  • 3 ounces of chilled prosecco
  • 2 ounces of Sarti Rosa
  • 1 ounce of chilled sparkling water.

3. Give it a stir, then garnish with a lime wedge. Serve immediately.

Hosting a spritz bar is a fun, colorful way to entertain, especially on a sunny summer afternoon. Here's everything you'll need:

  • Glasses: Set out large wine glasses or goblets.
  • Ice: Fill an ice bucket with plenty of ice.
  • Bubbly: Chill a bottle or two of Prosecco and some plain sparkling water.
  • Aperitivo: Offer a selection of Aperol, Sarti Rosa, St-Germain, Campari, and limoncello, plus a jigger or measuring cup for easy pouring.
  • Garnishes: Slice oranges and a grapefruit, cut lemons and limes into wedges, and set out fresh mint sprigs.
  • Extras: Don't forget cocktail straws or stirrers.

To make each spritz:

  • Fill the glass with ice.
  • Add 3 ounces Prosecco.
  • Add 2 ounces aperitivo.
  • Top with 1 ounce sparkling water.
  • Garnish and serve.

For a Hugo Spritz: Use 3/4 ounce of St-Germain instead of 2 ounces, as the elderflower flavor is much more concentrated. Use 4 ounces of Prosecco to balance the drink if desired.

If you’re a fan of rosé, try a Stavros, which is made with rosé, elderflower, lime, sparkling water, and fresh rosemary.

Your rainbow of colors and flavors—from hot pink Sarti Rosa to pale yellow limoncello to glowing orange Aperol—will impress your guests and brighten any summer gathering.
