Split them into two 8x8 pans—one for you, and one for a friend.

Sometimes, one pan is better than two—but two pans are even better than one. These casseroles, cakes, and desserts are all easy to divide between two 8x8-inch pans rather than baking in a single 9x13-inch pan. Keep one for yourself and share the other with a friend, neighbor, or family member who could use a homemade meal (or sweet treat). It’s the same recipe and the same amount of effort—just twice the opportunity to brighten someone’s day.

“I grew up with this chicken and rice casserole recipe. My grandmother got it from a lady from church at a potluck a long time ago. She passed it down to my mom, and it’s always been a family favorite. Quick and easy for weeknights, and the leftovers are just as good. You can use less butter on top, of course, but my momma and mamaw always used the full stick—gotta love Southern ladies and their butter!” —katiefbenham

“This is such a great recipe. I made it as directed, and as someone else mentioned, it is very forgiving. I used leftover ham from the holiday, diced it up and put a little more than the recipe called for. Everyone in the family really enjoyed it and it’s better than letting that ham go to waste.” —nickburgess80
