Affectionately known in the Appalachian South as Killed Lettuce, a resourceful dish that gets around the unpleasant effects of ingesting dangerous bacteria from foraged greens, the basic principles of cooking lettuce are useful to have in your back pocket—especially now, as food-borne cyclosporiasis infection continues to raise public health concerns.
According to the Michigan Department of Health and Human Services (MDHHS), which first announced the outbreak, the best way to prevent cyclosporiasis is to cook produce (such as possibly affected lettuce or greens) to 158 degrees F or higher.
