Two of the Triangle's most captivating chefs — Saltbox's Ricky Moore and Peregrine's Saif Rahman — are teaming up next month for an exclusive dinner in Raleigh.
Why it matters: The meal, cooked over an open flame, will celebrate North Carolina's eating habits and culinary practices.
What they're saying: "There's something honest about cooking over burning, smoldering wood. It strips everything down to technique, patience and respect for the ingredient," Moore said in an email announcing the event.
Zoom in: The chefs are not strangers; they cooked together over a decade ago at Spice Street, a former Giorgios Bakatsias restaurant in Chapel Hill.
- "I've known Ricky for many years," Rahman said in the news release, describing him as a brother, and someone "[whose] generosity, humility and unwavering belief that food is one of the purest expressions of love have shaped the way I think about cooking and hospitality."
Context: Rahman opened Peregrine last year in Raleigh. It was a semifinalist for Best New Restaurant in the James Beard Awards.
- The upcoming meal is the second in Rahman's Ember Series, pop-up dinners he does outdoors over a wood fire with a guest chef.
Driving the news: Moore is the award-winning chef behind Saltbox Seafood Joint in Durham.
- He is re-releasing his cookbook this fall with eight new recipes. The meal in August will serve as a preview of sorts.
