A new Central Kentucky restaurant is expanding beyond its Southern comfort menu with a dinner series.
Versailles restaurant Black Squirrel, which opened in February from one of Lexington’s top chefs, will have a four-course meal every other month built around a different cuisine, culture or story.
Black Squirrel’s Chef de Cuisine Olivia Jackson is honoring the heritage of two members of her kitchen team with the first stop, Peru.
There will be three seatings for Plates from Peru on Aug. 7. Priced at $80 per person, the first meal in the dinner series will be drawing on the Andean and Amazonian traditions that shape Peruvian cooking today.
The curated menu for the four-course meal with a shared appetizer is:
Shared plate: Mahi Mahi ceviche, served spoon-side, paired with Peruvian pisco
Soup: Fish stock-based soup with shrimp, vegetables, rice, and queso panela
Salad: Bibb lettuce, cherry tomatoes, cucumber, avocado, carrot, parsley, lemon vinaigrette
Entrée: Local braised tri-tip steak, peas and carrots, yuca, long grain rice
Dessert: Mazamorra - traditional Peruvian rice pudding with pineapple and red-corn-infused apple, toasted coconut, long grain rice
Optional wine pairings will be available.
Seating is limited and tickets can be purchased online at opentable.com.
The local restaurant says Peru will be the first stop in the dinner series. On the first Friday evening of every other month, a new location will be highlighted.
